Abstract:
Ethyl cellulose (EC) with different viscosity and mass fractions has been added to the soybean oil. The rheological properties of EC oil solution, stability of the oleo gel network, hardness and oil loss have been investigated in the paper. The results showed that the EC oil solution belonged to a type of pseudoplastic fluid. The apparent viscosity of solutions increased when the viscosity of EC ranged from 7 mPa·s to 100 mPa·s, while the apparent viscosity of EC200 oil solution decreased. In addition, the apparent viscosity of oil solution increased along with the increasing mass fractions and gelation formed. Network of EC100 oleo gel was the most stable to oscillation frequency when the mass fractions of EC100 were 8%. Texture analysis results showed that the trend of change on oleo gel hardness was consistent with the stability, and the EC100 oleo gel obtained the maximum hardness was 175.94 g. Moreover, oil loss of EC100 oleo gel could reach the least level as 3.14%, which indicated that a stable oleo gel network could be conducive to retention oil. © 2015, Editorial Dept. of JCCOA.
