Abstract:

A rapid determination method for non-sugar solids was developed based on the physicochemical properties of ethanol-water solution system and solids of rice wine. The new method was successfully applied for four kinds of rice wine and the results showed that it is a simple, rapid and low cost method without any special equipment. The precision of the new method is good as the current national standard method.
