Abstract：
采用正交设计试验方法,三偏磷酸钠和磷酰氯为交联剂,研制磷酸二酯交联淀粉,获得最佳工艺条件,可以工业化生产。水解物用作果冻胶凝剂和豆乳增稠穗定剂,试验表明凝胶剂强度强,稳定性好,使用简便,是易分散于冷水的速溶凝胶淀粉。
