Abstract:

目的:为优化海洋裂殖壶菌粕多肽酶解的工艺,在单因素的基础上运用响应面法以抗氧化活性为指标对裂殖壶菌粕的酶解工艺进行优化,确立最优水平,得到具备一定抗氧化活性的裂殖壶菌粕多肽,以期为人们提供一种新型的保健食品。方法:利用复合风味蛋白酶酶解裂殖壶菌粕,测定所得裂殖壶菌肽的抗氧化活性,优化酶解工艺,并利用不同自由基清除率对裂殖壶菌肽进行抗氧化活性表征。结果:根据响应面分析,得到优化的裂殖壶菌肽的制备条件为:酶与裂殖壶菌质量比为1:10,裂殖壶菌粕浓度7.0%,反应时间3h38min,反应温度50℃,pH7.0;最优工艺下,1mol/L的裂殖壶菌肽的DPPH自由基清除率为48.3%,羟基自由基清除率为...
