Abstract:

本发明涉及一种机械化生产肉燕皮的工艺,其特征在于:包括以下工艺步骤:将瘦肉置于擂溃机中擂溃,在擂溃过程中添加碱液,并将肉糜经滤网除筋,最终将瘦肉擂溃至细泥状;取出肉糜,上撒淀粉,经压面机压延,制得纸状或片状产品。该工艺使燕皮生产从传统手工制作走上工业化生产的道路,不但降低了劳动强度,提高了生产效率,而且制成品韧性好,口感佳,营养丰富。
