Abstract:
The effect of bonding mixture of β-sitosterol and γ-oryzanol on the hardness, polymorphism, melting properties and surface topography of lipid oil were determined by texture analyzer, X-ray diffraction, differential scanning calorimetry (DSC) and atomic force microscopy (AFM), respectively. The data showed that the hardness provided by bonding mixture of β-sitosterol and γ-oryzanol was equal to 2.2 to 2.8 times than that of tristearin when the saturate fat content was 30% to 50%. The addition of 8% bonding mixture in palm oil resulted in a few of β form crystal appearing, and the daily average transition rate from β' to β form increased 0.11% during 25 days storage. The oil phrase Tpeak increased 7.37, ΔH decerased 4.12 J/g while no obvious changes of Tend were observed in DSC results. AFM images revealed that the crystal behavior of palm oil became more fine and well-distributed, and the network structure has been enhanced. ©, 2015, Editorial Department, Chinese Cereals and Oils Association.
