Abstract:
The bonding forms between β-sitosterol and γ-oryzanol were studied by Fourier transform infrared spectrometer (FTIS). The stretching vibration of hydroxyl group of β-sitosterol was shifted obviously to the lower wave number as well as the carbonyl group of γ-oryzanol, which indicated the hydrogen bonds in β-sitosterol and γ-oryzanol. The most powerful hydrogen bonds appeared when the ratio of β-sitosterol and γ-oryzanol was 2:3, and the greatest hardness was also observed by texture analyzer and penetration test. The β-sitosterol and γ-oryzanol in the oil phase presented a new kind of self-assembly crystal structure with four petal shape, which was observed by polarized light microscopy.
