Abstract:
本文研究了乳酸菌发酵黑豆粕制备糖-肽复合物的工艺条件及其抗氧化能力.以DPPH自由基清除率和水解度为指标,通过对菌种筛选、料液比、接种量、温度、时间进行单因素试验,确定发酵法制备黑豆糖-肽复合物的最优工艺条件:发酵菌种为嗜热链球菌,料液比1∶5,接种量5.0%,37 ℃条件下发酵30 h.此条件下测得DPPH清除率为65.63%.结果表明,发酵工艺能够显著提高黑豆粕的水解度及抗氧化能力.
