Abstract:

通过测定ζ-电位,粒径,微观结构和乳化稳定性,探究多糖浓度,pH,离子强度和乳化方式对用壳聚糖和酪蛋白配制的O/W乳液稳定性和性质的影响。所有乳液含有0.5wt%MCT与95wt%水溶液(0.1wt%)。与酪蛋白乳液相比,酪蛋白和壳聚糖制备的乳液提高了乳液在环境胁迫下的稳定性,而且这种效果与多糖浓度密切相关,高浓度的壳聚糖能够有效提高乳液的稳定性,但是当壳聚糖含量低于0.03wt%时,乳液容易絮凝不稳定。通过增加壳聚糖来改善CA乳液对液滴乳化的稳定性,这归因于多糖提供的粘度和空间排斥。尽管双层乳液在储存期间表现出比酪蛋白/壳聚糖复合物形成的单层乳液更高的稳定性,但是,它受限于酪蛋白/壳聚糖的适...
