Abstract:
通过测定传统制作燕皮过程中肉糜的氮溶解指数、持水性、乳化稳定性、pH和粘度的变化,证实植物碱能够延迟肉糜僵硬,并可以用碳酸碱(Na_2CO_3或K_2CO_3)代替植物碱。
