Abstract:

本发明提供一种利用纯菌混合发酵生产红茶菌饮料,采用酿酒酵母、醋酸醋杆菌和植物乳杆菌三种菌复配,混合发酵生产红茶菌饮料。本发明利用纯菌种复配、混合发酵,对红茶菌培养基配方、发酵工艺条件进行优化,显著缩短发酵时间,避免杂菌污染,保证产品安全;菌种培养、复壮、保藏等管理方法科学合理,产品质量稳定,为红茶菌的产业化生产打下良好的基础;制备的红茶菌饮品不仅风味爽口,而且含有多种功效成分,是一种很有利用价值的微生物发酵饮品。
