Abstract:

报导了培养条件对发酵乳饮料中酪蛋白颗粒结构和酪蛋白水解程度的影响.结果表明,粒径小的酪蛋白颗粒可在37℃下而不是在菌种的最适温度下获得.在培养基中添加柠檬酸钠可导致拉径大的酪蛋白颗粒的形成.添加糖则使形成的酪蛋白颗粒的粒径变小.发酵sd后蛋白质水解物的浓度达到最高值.
