Abstract:
红曲色素和桔霉素均为红曲霉生长过程中产生的次级代谢产物.传统的固态发酵法生产红曲色素,操作繁琐,生产周期长(10~12天),产量低(3500~4000 U·g-1),且桔霉素含量较高(5~20 ppm/500 U).本工作进行高产红曲霉菌的筛选,在PDA平板筛选得一株高产红色素菌株Monascus FD33,具有红色素产率高且桔霉素含量低的特点.采用液固结合培养法,经培养条件优化,及补加适量的N源、玉米浆和无机盐,红色价提高至5052 U·g-1,高于现有国内最高生产水平约20%,发酵周期缩短为8天,同时桔霉素含量低于1 ppm/500 U.
